1 lb. ground beef

1/2 lb. beef liver (minced)

4 small wild leeks (bulb and leaves chopped fine)

2 eggs

oatmeal (a little less than the volume of meat)

dash of salt


Combine the above, (option to top the loaf with ketchup or other sauce), bake in a greased pan until done at 350 degrees.  Serves 2-4 people. While it's baking make a mild wasabi-like dipping sauce by grinding the roots and leaves of 3 or 4 garlic mustard plants to a paste in a coffee mill.


I checked Saylorville dam and Big Creek spillway - didn't look like a major run was underway in either place yet.  Fell back on pond fishing and foraging. Wild leeks and garlic mustard can be found around here,-93.7879998,55m/data=!3m1!1e3?hl=en  I didn't see any trout lily, lily of the valley, or other dangerous members of the lily family that are sometimes confused with wild leeks, but they might come up anytime.  Be triple sure of your identification or use the edibility test if it's your first time.
